Ingredients
Scale
Layers
- 16 ounces refried beans
- 3 ripe avocados (mashed)
- 1 lime (juiced)
- salt and pepper (to taste)
- 1 cup sour cream
- 1 tablespoon taco seasoning
- 1 cup salsa
- 1 cup cheddar cheese (shredded, or Mexican blend)
- ½ cup black olives (sliced)
- ½ cup green onions (chopped)
To Serve
- tortilla chips (to serve)
Instructions
- Prepare the base layer: Spread the refried beans evenly as the first layer in a large serving dish, ideally an 8-inch square glass dish.
- Make the guacamole layer: Mash the ripe avocados and mix them with lime juice, salt, and pepper to taste. Spread this mixture over the refried beans layer.
- Season the sour cream: Combine the sour cream with taco seasoning thoroughly, then spread this on top of the guacamole layer.
- Add salsa layer: Carefully spread the salsa evenly over the seasoned sour cream layer to avoid mixing.
- Apply cheese layer: Sprinkle the shredded cheddar cheese or Mexican blend over the salsa layer evenly.
- Top with olives and onions: Scatter the sliced black olives followed by chopped green onions over the cheese layer.
- Serve: Present the layered dip with tortilla chips for dipping.
Notes
- Chilling the dip for an hour before serving allows the flavors to meld beautifully.
- For a meatier option, add a layer of cooked, seasoned ground beef or shredded chicken.
- Experiment with different cheeses like Monterey Jack or pepper jack for varied flavors.
- Use dairy-free cheese and sour cream substitutes for a dairy-free version.
