Ingredients
Scale
Protein and Vegetables
- 2 large chicken breasts cut into ¼-inch thick strips
- ½ large red bell pepper cut into ¼-inch thick strips
- ½ large green bell pepper cut into ¼-inch thick strips
- 1 large red onion cut into ¼-inch thick strips
Seasoning and Oil
- 2 tablespoons olive oil
- 1 ounce packet of fajita seasoning (or 2 tablespoons homemade fajita seasoning)
Instructions
- Preheat Air Fryer: Preheat your air fryer to 400 degrees F. If your air fryer doesn’t have a preheat function, set it to 400 degrees F and let it run for 4-5 minutes before adding the fajitas.
- Prepare Ingredients: Add the chicken strips, red and green bell peppers, and red onion strips to a large bowl. Drizzle with 2 tablespoons of olive oil.
- Season: Sprinkle the 1 ounce packet of fajita seasoning over the mixture. Toss everything together until well combined and evenly coated.
- Cook Fajitas: Place the seasoned chicken and vegetable mixture into the preheated air fryer basket. Cook at 400 degrees F for 14 minutes, stirring or shaking the basket once halfway through. Check that the chicken reaches an internal temperature of 165 degrees F to ensure it is fully cooked.
- Serve: Serve the hot chicken fajitas immediately in warm tortillas with your favorite toppings such as sour cream, guacamole, shredded cheese, or salsa.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Freezing cooked fajitas is not recommended as the texture of the vegetables becomes mushy when thawed.
- Reheat leftovers in the air fryer at 350 degrees F for 3-4 minutes or microwave for 2-3 minutes.
- Cooking time may vary depending on your air fryer model and the thickness of the chicken strips; always check internal temperature for safety.
- Cut chicken and vegetables to the same size and thickness to ensure even cooking.
- You can substitute taco seasoning for fajita seasoning if needed.
