  1. Slice Zucchini: Slice your zucchini into 3 inch sticks about the size of a french fry to ensure even cooking and crispiness.
  2. Prepare Flour Mixture: Combine all-purpose flour, Italian seasoning, salt, and pepper in a large bowl and mix well.
  3. Whisk Egg Mixture: In a medium bowl, whisk together the two eggs and 1 tablespoon of water until smooth and pale yellow.
  4. Combine Breadcrumb Mixture: In another bowl, mix the Italian breadcrumbs with the grated parmesan cheese thoroughly.
  5. Coat Zucchini: Dip zucchini sticks first in the flour mixture, tossing to coat evenly and shaking off excess flour. Then dip each stick into the egg mixture, allowing excess to drip off.
  6. Bread Zucchini: Roll the egg-coated zucchini in the breadcrumb and parmesan mixture, turning several times to fully coat each piece.
  7. Prepare Air Fryer: Spray the bottom of the air fryer basket with non-stick cooking spray. Place the coated zucchini sticks in a single layer, ensuring they do not touch. Spray the tops of the zucchini fries with more cooking spray.
  8. Air Fry: Cook at 385 degrees Fahrenheit for 10 minutes, or until the zucchini fries are golden brown and crispy.
