- 1 pinch nutmeg
- 3 Tbsp cornstarch or arrowroot starch
- 3 Tbsp fresh apple juice or water
- 1 pinch sea salt

Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (176 C) and prepare a 9×13-inch baking dish or a similar size.
- Prepare Apples: Peel and core the apples, quarter them, then slice them thinly lengthwise using a paring knife. Aim for consistent thin slices to ensure even cooking.
- Mix Ingredients: Place the sliced apples in the baking dish and add lemon juice, coconut oil if using, coconut sugar, ground cinnamon, fresh grated ginger, nutmeg, cornstarch, apple juice or water, and a pinch of sea salt. Toss everything together to combine evenly.
- Bake Covered: Loosely cover the baking dish with foil and bake the apples for 45 minutes to cook through and allow the flavors to meld.
- Finish Baking Uncovered: Remove the foil carefully and bake for an additional 15 minutes or until the apples are very fork tender and slightly caramelized on top.
- Serve: Enjoy warm by itself or top with coconut whipped cream or vanilla bean coconut ice cream. Leftovers can be stored covered in the refrigerator for 3-4 days or frozen up to 1 month. Reheat gently with a splash of water if the sauce is too thick.
