Description

Easy Cinnamon Baked Apples is a wholesome and comforting dessert featuring tender, spiced apples baked to perfection. This recipe combines tart and sweet apples with warming cinnamon, fresh ginger, and a hint of nutmeg, sweetened with coconut sugar and thickened with cornstarch to create a luscious caramel-like sauce. Serve warm with optional coconut whipped cream or vanilla bean coconut ice cream for a deliciously cozy treat.

Ingredients

Scale

Apples

  • 6-7 medium to large apples (2 tart like granny smith, 4 sweet like honeycrisp)
  • 2 Tbsp lemon juice
  • 1 Tbsp coconut oil (optional)
  • 2/3 cup coconut sugar
  • 1 ½ tsp ground cinnamon
  • 3/4 tsp fresh grated ginger
  • 1 pinch nutmeg
  • 3 Tbsp cornstarch or arrowroot starch
  • 3 Tbsp fresh apple juice or water
  • 1 pinch sea salt

For Serving (Optional)

  • Coconut Whipped Cream
  • Vanilla Bean Coconut Ice Cream

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (176 C) and prepare a 9×13-inch baking dish or a similar size.
  2. Prepare Apples: Peel and core the apples, quarter them, then slice them thinly lengthwise using a paring knife. Aim for consistent thin slices to ensure even cooking.
  3. Mix Ingredients: Place the sliced apples in the baking dish and add lemon juice, coconut oil if using, coconut sugar, ground cinnamon, fresh grated ginger, nutmeg, cornstarch, apple juice or water, and a pinch of sea salt. Toss everything together to combine evenly.
  4. Bake Covered: Loosely cover the baking dish with foil and bake the apples for 45 minutes to cook through and allow the flavors to meld.
  5. Finish Baking Uncovered: Remove the foil carefully and bake for an additional 15 minutes or until the apples are very fork tender and slightly caramelized on top.
  6. Serve: Enjoy warm by itself or top with coconut whipped cream or vanilla bean coconut ice cream. Leftovers can be stored covered in the refrigerator for 3-4 days or frozen up to 1 month. Reheat gently with a splash of water if the sauce is too thick.

Notes

  • You can substitute 1/2 tsp ground ginger for the 3/4 tsp fresh grated ginger used in the recipe.
  • If you prefer convenience, use store-bought vegan vanilla coconut ice cream such as So Delicious Vanilla Coconut Ice Cream.
  • Nutrition info was estimated using fewer apples, without any sides, coconut oil, or apple juice to keep it conservative.
  • Use organic apples when possible for the best flavor and quality.
  • Try to slice apples evenly thin for uniform cooking and caramelization.
