Description

This Buffalo Chicken recipe features thinly pounded chicken breasts marinated in a spicy and tangy buffalo sauce, then cooked to perfection either on the stovetop or grill. Finished with a sweet and zesty glaze, this versatile dish is perfect for sandwiches, salads, wraps, or enjoyed on its own.

Chicken

  • 2-3 chicken breasts pounded thin (approx. 1 pound)
  • 3 tablespoons olive oil, divided

Buffalo Marinade

  • 1/4 cup Frank’s hot WINGS Sauce or Frank’s ORIGINAL Hot Sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Buffalo Glaze

  • Reserved marinade
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice


Instructions

  1. Prepare Marinade: Whisk together all Buffalo Marinade ingredients in a medium bowl. Measure out 1/4 cup marinade and combine with 2 tablespoons olive oil in a shallow dish or freezer bag. Add pounded chicken breasts and toss to coat evenly. Refrigerate and marinate for 2 hours up to overnight.
  2. Make Buffalo Glaze: To the remaining marinade, whisk in 1 tablespoon honey and 1 1/2 teaspoons lime juice. Store glaze in the refrigerator until ready to use.
  3. Bring Chicken to Room Temperature: Remove marinated chicken from fridge and let sit at room temperature for 15-30 minutes before cooking, to ensure even cooking.
  4. Cook on Stovetop: Heat a large non-stick skillet over medium-high heat until very hot. Add chicken and cook undisturbed for 3-5 minutes until nicely browned or slightly blackened on one side. Flip chicken, cover skillet, reduce heat to medium, and cook another 5-7 minutes until cooked through. Remove chicken and let rest for 5 minutes before slicing.
  5. Or Grill Chicken: Preheat and grease grill to medium heat (375-450°F). Grill chicken for 5-7 minutes per side until an internal thermometer reads 160°F. Remove and let rest 5 minutes before slicing.
  6. Glaze the Chicken: Brush the cooked chicken with desired amount of buffalo glaze to adjust heat level to your preference. Serve warm.
