Description

Lasagna Roll Ups

  • 12 oz. lasagna noodles
  • 15 oz. whole milk ricotta cheese
  • 2 cups shredded mozzarella, divided
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 10 oz. frozen spinach, thawed
  • 1 24 oz. jar pasta sauce


Instructions

  1. Preheat and Boil Noodles. Preheat your oven to 400ºF. Bring a large pot of water to a rolling boil over high heat, add 1 tsp of salt to season. Add the lasagna noodles and boil them just until al dente, about 8-10 minutes, being careful not to overcook so they remain firm enough to roll. Drain the noodles in a colander and let them cool enough to handle.
  2. Prepare the Filling. While the noodles are boiling, thoroughly drain the thawed spinach by squeezing out excess water. In a mixing bowl, combine the spinach with the ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, salt, and freshly cracked black pepper. Stir well until the mixture is smooth and evenly combined.
  3. Assemble the Roll Ups. Lay out several noodles on a clean surface once they are cool to the touch. Spread approximately 1/4 cup of the spinach and cheese mixture evenly across each noodle, covering edge to edge. Then, carefully roll each noodle up tightly and place the roll seam-side down into a large casserole dish. Continue until all the filling is used. You should get about 16 roll ups; any leftover noodles can be kept as backup in case some tear during rolling.
  4. Add Sauce and Cheese. Pour the entire jar of pasta sauce evenly over the rolled noodles in the casserole dish. Sprinkle the remaining 1 cup of shredded mozzarella cheese over the top to add a bubbly golden crust when baked.
  5. Bake and Serve. Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes until the cheese has melted and the filling is hot throughout. Serve the lasagna roll ups warm and enjoy this comforting Italian-inspired dish.

Notes

  • Make sure not to overcook the noodles, as they can become too fragile to roll properly.
