  • 3 packed cups Romaine lettuce (about 2/3 head)
  • 1 cup heaping (6 oz) grape tomatoes, halved

  • 1 avocado, diced
  • 5 burrito size tortillas, whole wheat or white, warmed

Dressing

  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 anchovy fillets, mashed finely to a paste (1 1/2 tsp paste)
  • 1 Tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic (1 clove)
  • Salt and black pepper, to taste


Instructions

  1. Prepare the dressing: Whisk together Greek yogurt, mayonnaise, olive oil, anchovy paste, lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic in a bowl. Season with salt and black pepper to taste, mixing until smooth.
  2. Combine wrap ingredients: In a large mixing bowl, add chopped cooked chicken, Romaine lettuce, halved grape tomatoes, and shredded parmesan cheese. Drizzle the prepared dressing over and use tongs to toss everything together until evenly coated.
  3. Add avocado: Gently fold in the diced avocado to evenly distribute throughout the mixture without mashing it.
  4. Assemble the wraps: Lay each warmed tortilla flat and place a portion of the salad mixture in a row down the center. Fold the sides and roll tightly, tucking in ends if desired to prevent filling from falling out.
  5. Serve: Cut each wrap in half for easier handling and serve immediately.

Notes

  • For grilled chicken: Preheat grill to medium-high (about 425°F). Pound chicken breasts to even thickness and brush lightly with olive oil. Mix 1 tsp Italian seasoning, 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp onion powder, and 1/8 tsp garlic powder; sprinkle over both sides of chicken.
