Ingredients
Scale
BBQ Chicken
- 2 cups shredded boneless skinless chicken breast
- 1 cup barbecue sauce
Chipotle Mayo
- 1/4 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- 1/2 teaspoon sweet paprika
- 1 clove garlic, finely minced or crushed
- 1/2 tablespoon chopped cilantro
- pinch of salt
Sliders
- 12 count Hawaiian sweet rolls
- 12 slices cheddar cheese (orange)
- 1/3 cup thinly sliced red onion
- 1 tablespoon melted butter, plus more for serving
- chopped parsley and chives, for serving
Instructions
- Prep and Toast the Rolls: Turn the oven to low broil. Slice the Hawaiian rolls in half and place on a lined baking sheet. Toast the halves, cut side up, watching carefully until they are golden brown and toasted. Remove from the oven and then lower the oven temperature to 350 degrees Fahrenheit.
- Make the Barbecue Chicken: In a mixing bowl, combine the shredded chicken with the barbecue sauce, stirring until well coated and evenly mixed.
- Make the Chipotle Mayo: Add the mayonnaise, chipotle pepper in adobo sauce, sweet paprika, garlic, chopped cilantro, and a pinch of salt to a food processor or blender. Blend until smooth and well combined, then transfer to a small bowl.
- Assemble the Sliders: Brush the chipotle mayo on both the top and bottom halves of the toasted rolls. On the bottom half of the rolls, place half of the cheddar cheese slices (6 slices), then layer the barbecue chicken evenly over the cheese. Top the chicken with thinly sliced red onion, followed by the remaining slices of cheddar cheese (6 slices). Place the top half of the rolls over the layers.
- Bake the Sliders: Brush the melted butter over the tops of the assembled rolls. Cover the baking sheet with aluminum foil and bake at 350 degrees Fahrenheit for 10 minutes.
- Finish Baking: Remove the foil and continue baking the sliders uncovered for an additional 15 minutes, or until the cheese is fully melted and the tops of the rolls are golden brown and toasted.
- Serve: Sprinkle fresh chopped chives and parsley over the baked sliders. Cut into individual sandwiches and serve warm.
Notes
- Use Hawaiian sweet rolls for a soft and slightly sweet slider base that complements the smoky chicken.
- The chipotle pepper in adobo sauce adds a smoky heat; adjust quantity for less spice if desired.
- Watch the broiling process carefully to prevent burning the rolls when toasting initially.
- Substitute shredded rotisserie chicken for a quicker preparation.
- For a dairy-free version, omit cheese or use a suitable dairy-free alternative.
- To keep sliders warm before serving, cover them with foil or keep in a low-temperature oven.
