Jello Mixture
- 1 (6 oz) box strawberry jello
- 1 (6 oz) box lime jello
- 2 cups boiling water
Topping
- 1 (3.4 oz) box instant vanilla pudding mix
- 1 cup milk
- 1 (8 oz) container frozen whipped topping, thawed
Decoration
- Red and green sprinkles or decorations
Instructions
- Preheat and Prepare Cake Pan: Preheat oven to 350°F or temperature specified on the cake mix box. Grease a 9x13-inch baking dish with butter or nonstick spray and set aside.
- Mix and Bake Cake: In a mixing bowl, prepare the white cake mix according to the package instructions. Pour the batter into the prepared dish and bake as directed on the package, usually around 30 minutes.
- Cool and Poke Holes: Remove the cake from the oven and let it cool for 15 minutes. Using a fork or the handle end of a wooden spoon, poke holes about every inch across the entire cake surface. Allow the cake to cool further while preparing the jello.
- Prepare Jello: In two separate bowls, dissolve the strawberry jello in 1 cup boiling water and the lime jello in 1 cup boiling water, stirring until fully dissolved.
- Pour Jello Over Cake: Alternately pour the red strawberry and green lime jello over the cake in rows, making sure enough jello seeps into the holes. Some jello might remain unused.
- Chill Cake: Refrigerate the cake for about 15 minutes to allow the jello to start setting.
- Prepare Pudding Topping: Whisk together the instant vanilla pudding mix and milk until smooth. Fold in the thawed whipped topping gently until combined.
- Top and Chill: Spread the pudding mixture evenly over the chilled cake. Place the cake back in the refrigerator and chill for an additional 2 hours until fully set.
- Decorate and Serve: Before serving, sprinkle red and green holiday sprinkles or decorations on top. Slice and enjoy your festive Christmas poke cake!
Notes
- Use room temperature ingredients for the cake for best texture.
- If you want more vibrant jello colors, use the full amount of jello mixture made.
- For a dairy-free version, substitute milk and whipped topping with plant-based alternatives.
- Make sure to poke holes evenly spaced so the jello distributes uniformly.
- This cake tastes best when chilled thoroughly to allow the pudding and jello to set.
