Instructions

- Add Wet Ingredients: Add the creamy peanut butter, egg, and vanilla extract to the bowl and beat for an additional 1 minute until fully incorporated.
- Mix Dry Ingredients: Fold in the rolled oats, flour, baking soda, and salt, stirring just until combined to avoid overmixing.
- Add Chocolate and M&M's: Gently fold in the chocolate chips and 3/4 cup of the red and green holiday M&M's, reserving 1/4 cup for topping after baking.
- Chill Dough: Tightly wrap the cookie dough and chill it in the refrigerator for 30 minutes to firm up.
- Preheat Oven: After chilling, preheat your oven to 365 degrees Fahrenheit (185 degrees Celsius).
- Scoop Cookies: Scoop the dough onto a light-colored baking sheet, spacing the cookies at least two inches apart to allow for spreading.
- Bake Cookies: Bake in the preheated oven for 10 minutes, or until the edges are lightly golden.
