Instructions

  1. Preheat Oven: Preheat your oven to 180C/160C Fan and line a 9″ square baking tray with parchment paper to prepare for baking.
  2. Melt Chocolate and Butter: Melt the unsalted butter and dark chocolate together in a heatproof bowl over a pan of boiling water or in the microwave for 1-2 minutes until fully melted. Set aside to cool to room temperature.
  3. Whisk Eggs and Sugar: Using an electric whisk or stand mixer, whisk the eggs and caster sugar for several minutes until the mixture becomes pale, mousse-like, and has doubled in volume. The whisk should leave a trail in the mixture before disappearing.
  4. Fold in Chocolate Mixture: Pour the cooled melted chocolate and butter mixture onto the whisked eggs and sugar. Gently fold together carefully to retain the airiness you created in the previous step.
  5. Add Dry Ingredients: Sift the cocoa powder and plain flour on top of the mixture and fold again carefully to preserve the air in the batter.
  6. Incorporate Chocolate Chips: Gently fold in the milk and white chocolate chips until evenly distributed throughout the batter.
  7. Bake Brownies: Pour the batter into the prepared tray and bake in the oven for 30 minutes. Once baked, allow the brownies to cool completely in the tray.

  10. Make Buttercream: Cream together the unsalted butter and icing sugar until smooth and fluffy. Add green food colouring gradually to reach the desired shade of green.
  11. Decorate Brownies: Transfer the green buttercream to a large piping bag fitted with a closed star tip. Pipe zigzag lines over the brownie trees to resemble frosting.
  12. Add Festive Decorations: Decorate the buttercream with sprinkles, sweets, and place a yellow star candy (such as an M&M) on top of each brownie tree.
