  • 1 tablespoon olive oil

Instructions

  1. Cook the Pasta Bring a pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain the pasta and set it aside.
  2. Prepare the Chicken Pound the chicken breasts to about 1 inch thickness. Season both sides with 1 tablespoon Cajun seasoning, 1/2 teaspoon smoked paprika, and pepper to taste.
  3. Sear the Chicken In a large skillet over medium-high heat, melt 1 tablespoon butter and add olive oil. Sear the chicken on each side until golden brown and cooked through, reaching an internal temperature of 165°F, about 4-5 minutes per side. Remove chicken from skillet and let rest on a plate. Slice into thick pieces or bite-sized chunks.
  4. Sauté Garlic Lower the heat to medium. In the same skillet, melt the remaining 1 tablespoon butter and sauté the minced garlic for about 30 seconds until fragrant.
  5. Make the Sauce Add the tomato paste to the skillet, then pour in the chicken broth and heavy cream. Use a spoon to scrape up any browned bits from the bottom of the pan, mixing them into the sauce. Add any juices from the chicken plate to enhance flavor.
