Instructions
- Prepare Chicken: Using a sharp knife, fillet each chicken breast into two thinner cutlets, or use thin-cut chicken breasts as is. Season each piece with Italian seasoning, salt, and black pepper. Sprinkle the flour evenly over both sides and rub in until coated thoroughly.
- Cook Chicken: Heat a large skillet over medium heat and add olive oil along with 1 tablespoon of butter. When hot, add the chicken pieces and cook about 4 minutes per side until golden brown and cooked through. Remove chicken and keep warm on a clean plate.
- Prepare Garlic: Peel the garlic cloves, then smash them gently with the side of a chef's knife. Reduce heat to medium-low, add remaining 1 tablespoon butter to the skillet, then add the smashed garlic cloves. Sauté for 3 minutes or until the garlic is lightly browned and fragrant, stirring frequently to avoid burning.
- Make Sauce: Pour chicken broth and heavy cream into the skillet with garlic. Add garlic powder and stir, scraping up any browned bits from the skillet bottom. Simmer for 8 to 10 minutes until the sauce thickens and reduces by about half. Season with additional salt and pepper to taste (approximately ⅛ tsp each).
