  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt

  • 2 Tbsp butter, divided

  • 1 whole garlic bulb (about 8-9 garlic cloves)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and Pepper to taste


Instructions

  1. Prepare Chicken: Using a sharp knife, fillet each chicken breast into two thinner cutlets, or use thin-cut chicken breasts as is. Season each piece with Italian seasoning, salt, and black pepper. Sprinkle the flour evenly over both sides and rub in until coated thoroughly.
  2. Cook Chicken: Heat a large skillet over medium heat and add olive oil along with 1 tablespoon of butter. When hot, add the chicken pieces and cook about 4 minutes per side until golden brown and cooked through. Remove chicken and keep warm on a clean plate.
  3. Prepare Garlic: Peel the garlic cloves, then smash them gently with the side of a chef's knife. Reduce heat to medium-low, add remaining 1 tablespoon butter to the skillet, then add the smashed garlic cloves. Sauté for 3 minutes or until the garlic is lightly browned and fragrant, stirring frequently to avoid burning.
  4. Make Sauce: Pour chicken broth and heavy cream into the skillet with garlic. Add garlic powder and stir, scraping up any browned bits from the skillet bottom. Simmer for 8 to 10 minutes until the sauce thickens and reduces by about half. Season with additional salt and pepper to taste (approximately ⅛ tsp each).
