Instructions

  1. Cook the bacon: Heat a large pan over medium heat and add the cut bacon pieces. Cook until crispy, then remove the bacon and place it on a paper towel-lined plate to drain excess grease. Remove some bacon grease from the pan, leaving about 2 tablespoons for cooking the vegetables.
  2. Sauté the onion: Add the diced onion to the pan with the reserved bacon grease and sauté for 2 to 3 minutes until the onion turns translucent and soft.
  3. Add seasonings and garlic: Stir in the minced garlic, stone ground mustard, smoked paprika, kosher salt, and freshly ground black pepper. Mix well to combine the flavors.
  4. Cook the cabbage: Place the sliced and chopped cabbage on top of the onion mixture. Use a large spoon or tongs to stir and sauté the cabbage for 12 to 15 minutes until it becomes buttery soft and slightly caramelized.
  5. Combine with bacon and serve: Toss the crispy bacon back into the cabbage mixture and stir everything together to combine. Serve hot as a flavorful side dish.

Notes

  • Use Dijon mustard as a substitute if stone ground mustard is unavailable.
  • To make it spicier, add a pinch of cayenne pepper or chili flakes when adding paprika.
  • For a vegetarian version, omit bacon and substitute with smoked paprika and liquid smoke for smoky flavor.
