Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit and line one or two baking sheets with parchment paper for easy cleanup.
  2. Mix Seasonings: In a small bowl, combine kosher salt, paprika, garlic powder, and black pepper to create the seasoning blend.
  3. Coat Potatoes: In a large bowl, toss the sliced potato rounds with olive oil and the seasoning mix until all slices are evenly coated.
  4. Arrange and Bake: Spread the coated potato slices in a single layer on the prepared baking sheets. Bake for 20 minutes, then carefully flip each slice and bake for an additional 9 minutes or until golden brown and crispy.
  5. Combine and Top: Remove the potatoes from the oven and combine all on one baking sheet. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the potatoes.
  6. Melt Cheese: Return the baking sheet to the oven and bake for 3 to 4 minutes, or until the cheese has fully melted.
  7. Add Garnishes: Remove from the oven and top with diced jalapeno, Roma tomatoes, sour cream, shallots, and green onions before serving.
