Potatoes and Seasoning

  • 1 ½ pounds baby potatoes halved
  • ⅓ cup grated Parmesan cheese

  • ¼ teaspoon black pepper

Butter and Serving

  • 6 tablespoons salted butter melted, save 1 tablespoon for brushing on top

Instructions

  1. Preheat Oven: Preheat the oven to 425˚F to prepare for baking the potatoes.
  2. Score Potatoes: Using a small sharp knife, score the potatoes gently to help them cook evenly and absorb flavors.
  3. Melt Butter: Place the melted butter in a 9 x 13-inch baking dish and set it in the oven for 5 minutes until the butter is hot and melted.
  4. Create Flavor Paste: Remove the baking dish from the oven and add the grated Parmesan cheese and spices (oregano, garlic powder, onion powder, salt, and black pepper) to the melted butter. Stir well to form a flavorful paste and spread it evenly to coat the bottom of the pan.
  5. Arrange Potatoes: Place the halved potatoes cut side down in the baking dish on top of the butter and cheese paste to ensure maximum crispiness.
  6. Brush Potatoes: Brush the tops of the potatoes with the reserved tablespoon of melted butter for added flavor and browning.
  7. Bake: Bake the potatoes in the oven for about 35 minutes, or until they are golden brown and crispy on the edges.
