Description
A hearty and comforting crockpot chicken and stuffing recipe featuring tender slow-cooked whole chicken layered over a medley of diced carrots, celery, and onion, infused with poultry seasoning and paprika, and finished with flavorful stove top stuffing cooked in the savory juices.

- 2 medium carrots diced
- 1 small yellow onion diced
- 2 medium celery ribs diced
Chicken and Seasoning
- 5 pounds whole chicken
- 1/2 cup salted butter melted
- 1 teaspoon poultry seasoning
- 1 teaspoon paprika
Stuffing
- 6 ounces box stove top stuffing any flavor
Instructions
- Prepare Vegetables and Chicken: Add the diced carrots, onion, and celery to the bottom of the slow cooker. Clean out the inside of the whole chicken, discard any innards, then place the chicken on top of the vegetable layer.
- Season Chicken: Pour the melted salted butter evenly over the chicken. Sprinkle the poultry seasoning and paprika on top, then rub all the seasonings thoroughly over the chicken skin. Optionally, add salt and pepper to taste.
- Cook Chicken: Place the lid on the slow cooker and cook on high heat for 6 hours until the chicken is tender and cooked through.
- Remove Chicken and Prepare Stuffing: Carefully remove the chicken and transfer it to a platter, covering with foil to keep warm. In the slow cooker, remove all liquid but reserve 1.5 cups of the cooking liquid, leaving the cooked vegetables in place.
- Add Stuffing: Stir the contents of the 6-ounce stuffing box into the reserved liquid and vegetables in the slow cooker. Replace the lid and cook on high for an additional 10 minutes, allowing the stuffing to absorb the flavors and cook through.
- Serve: Fluff the stuffing with a fork. Slice the chicken as desired, either placing it back into the slow cooker for a warm serving presentation or serving directly from the platter. Enjoy your crockpot chicken and stuffing!
Notes
- Cleaning out the chicken cavity before cooking removes any undesirable innards which improves flavor and presentation.
- You can customize the seasoning by adding salt and pepper or using other herbs like thyme or rosemary as preferred.
- Using any favorite flavor of stove top stuffing allows for flavor variation.
- If you prefer a crispier chicken skin, you can briefly broil the cooked chicken for 3-5 minutes after slow cooking.
- Make sure to reserve exactly 1.5 cups of liquid for the stuffing to prevent it from being too dry or soggy.
