  • 4 cups shredded napa cabbage

For the Ginger-Sesame Dressing:

  • 3 Tbsp rice vinegar
  • 2 Tbsp reduced sodium soy sauce
  • 2 cloves garlic, minced
  • 2 Tbsp honey
  • 1 Tbsp fresh ginger, peeled and minced
  • 2 tsp toasted sesame oil
  • 3 Tbsp olive oil


Instructions

  1. Make the Dressing: Combine rice vinegar, reduced sodium soy sauce, minced garlic, honey, minced fresh ginger, toasted sesame oil, and olive oil in a small jar with a sealed lid. Shake well until fully combined and smooth. Store any extra dressing in the jar for later use.
  2. Prepare the Salad: In a large bowl, combine shredded napa cabbage, cooked shredded chicken, grated carrots, julienned red bell pepper, chopped cilantro, and chopped green onions. Toss the ingredients together to mix evenly.
  3. Toss with Dressing: Drizzle the prepared ginger-sesame dressing over the salad. Toss thoroughly until all ingredients are well coated with the dressing.
  4. Serve and Garnish: Sprinkle wonton crisps or chopped peanuts over the top for a crunchy finish. Serve immediately and enjoy the fresh flavors.

Notes

  • Using rotisserie chicken saves time and adds great flavor, but leftover cooked chicken or poached chicken breast works well too.
