Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • 1 pound lean ground turkey
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 4 ounce can diced green chiles
  • 15 ounce can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 ounce jar salsa
  • 1 cup shredded Colby Jack cheese
  • 10 tortilla chips

Instructions

  1. Preheat Broiler: Preheat your oven to the broil setting so it's ready to melt and brown the cheese topping later on.
  2. Cook Turkey: Heat a 12-inch skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Add the ground turkey and crumble it with a spatula as it cooks.
  3. Sauté Vegetables: Push the cooked turkey to one side of the skillet. Add diced red bell pepper and yellow onion to the empty side. Sprinkle with kosher salt, freshly ground black pepper, chili powder, ground cumin, garlic powder, and smoked paprika. Sauté the veggies while continuing to cook and crumble the turkey until it is fully cooked through.
  4. Add Remaining Ingredients: Stir in the drained black beans, frozen corn, diced green chiles, chopped cilantro, and salsa. Mix everything well and heat through until warmed.
  5. Add Topping and Broil: Evenly top the skillet mixture with tortilla chips and shredded Colby Jack cheese. Place the skillet under the oven broiler and broil until the cheese is melted and lightly browned, about 3 to 5 minutes. Watch carefully to prevent burning.
  6. Garnish and Serve: Remove from the oven, garnish with additional chopped cilantro if desired, and serve hot for a delicious, hearty meal.

Notes

  • Use lean ground turkey for a healthier protein option and less grease.
  • If you don't have a broiler, you can place the skillet in a 375°F oven until cheese melts, about 8-10 minutes.
  • For extra heat, add chopped jalapeños or hot sauce to the skillet before cooking.
  • If you prefer, substitute Colby Jack cheese with cheddar or Monterey Jack cheese.
  • Serve with sour cream or avocado slices for extra creaminess.
