Description

A rich and creamy whipped filling perfect for decorating Fancy Christmas Cakes. This vanilla-flavored frosting is smooth, easy to spread, and can be stored refrigerated for up to two weeks, making it an ideal complement for holiday cakes or other desserts.

Ingredients

Scale

Whipped Filling

  • 1/2 cup (1 stick or 113g) butter, softened
  • 1 tsp McCormick® Pure Vanilla Extract
  • 16 oz confectioners' sugar, sifted
  • 2 tbsp (2% or whole) milk
  • Pinch salt

Instructions

  1. Prepare Butter: Beat butter in the bowl of a stand mixer fitted with a whisk attachment on medium-high speed until it becomes light and fluffy, which should take about 3 minutes.
  2. Add Vanilla Extract: Pour in the vanilla extract and mix to combine briefly.
  3. Add Dry and Wet Ingredients: With the mixer on low speed, slowly add confectioners' sugar, milk, and salt while frequently scraping the sides and bottom of the bowl to ensure even mixing.
  4. Whip Frosting: Once fully incorporated, increase the mixer speed to medium-high or high and whip the frosting for at least 3 minutes; whipping for longer (up to 7 minutes) will give a lighter texture.
  5. Adjust Consistency: If the frosting is too thick to spread easily, gradually beat in additional milk until the desired consistency is achieved.
  6. Store: Store the whipped filling in the refrigerator for up to 2 weeks. Before using, rewhip to restore fluffiness.

Notes

  • For the cake base, use the recommended White Cake recipe to create from-scratch cakes that pair beautifully with this filling.
  • Ensure butter is softened to room temperature for easier whipping.
  • Sift the confectioners' sugar to avoid lumps in the frosting.
  • Adjust milk quantity to achieve preferred frosting consistency, especially if using low-fat milk variants.
  • Rewhipping cold frosting before use ensures a smooth and spreadable texture.
