  • 2 ¼ teaspoons (1 packet) instant yeast
  • 4 ½ cups (572 grams) bread flour

Instructions

  1. Prepare the dough mixture: Combine the lukewarm water, warm milk, 1 tablespoon melted butter, lightly beaten eggs, granulated sugar, fine sea salt, and instant yeast in the bowl of a stand mixer.
  2. Add initial flour: Stir in 2 cups (254 grams) of bread flour with a wooden spoon until a rough, shaggy dough forms.
  3. Knead the dough: Attach the dough hook and knead on medium-low speed while gradually adding the remaining flour until a dough mass forms. Increase to medium-high speed and knead for 4 to 5 minutes until dough is soft, smooth, elastic, and slightly tacky.
  4. First rise: Lightly grease a large bowl with cooking spray, place the dough inside, cover with plastic wrap or a kitchen towel, and let it rise at room temperature for 1 hour to 90 minutes until doubled and puffy.
  5. Shape the rolls: Grease a 9×13-inch baking pan with butter. Gently deflate the dough and divide it into 12 equal pieces using a bench scraper or knife. Shape each piece into a ball and place them in the prepared pan.
  6. Second rise: Cover the pan lightly with plastic wrap and let the rolls rise for about 1 hour until nearly doubled in size.
  7. Preheat oven and prepare rolls: Preheat the oven to 375°F. Brush the rolls gently with the beaten egg wash.
  8. Bake: Bake the rolls for 20 minutes or until they turn golden brown on top.
  9. Finish and serve: Remove the rolls from the oven; brush immediately with melted butter and sprinkle with flaky sea salt. Serve warm. Store leftovers in an airtight container or zip-top bag for up to 3 days.
