Instructions

  1. Preheat Oven: Preheat the oven to 375℉ and lightly grease a 24-cavity mini muffin pan. Set aside.
  2. Caramelize Onions: Heat a large sauté pan over medium heat and melt the butter. Add the thinly sliced onions and toss to separate. Cook, stirring occasionally, until onions are soft and starting to brown, about 25 to 30 minutes. Sprinkle sugar and black pepper over the onions and adjust heat to medium-low if onions start to cook too quickly. Stir in dry sherry or red wine vinegar and remove from heat.
  3. Prepare Puff Pastry: Lightly flour a clean surface. Roll out the thawed puff pastry sheet slightly and cut into 24 equal small squares using a knife.
  4. Assemble Bites: Press each puff pastry square into a cavity of the mini muffin pan. Spoon about 1 tablespoon of caramelized onions into each pastry cup. Top with a sprinkle of shredded Gruyere or Swiss cheese.
  5. Bake: Bake in the preheated oven for 22 minutes or until the pastry is puffed and golden brown. Watch carefully to avoid burning.
  6. Garnish and Serve: Remove from oven, sprinkle with chopped thyme, and serve warm or at room temperature.
