Garlic Parmesan Butter

  • 1 pound salted butter, softened
  • 5 cloves garlic, grated
  • ½ cup finely grated parmesan cheese
  • 1 lemon, zest and juice
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • ¼ cup fresh parsley, finely chopped, optional, for serving

Chicken Skewers

  • 3 pounds boneless, skinless chicken thighs, cut into 2-inch strips
  • 2 teaspoons salt
  • ½ teaspoon black pepper


Instructions

  1. Prepare garlic parmesan butter: Melt the softened butter in a medium-sized bowl, then add the grated garlic, parmesan cheese, lemon zest, lemon juice, salt, and red pepper flakes. Stir until fully combined. Note that the butter sauce may firm up while preparing the rest of the recipe, which is normal.
  2. Trim skewers: Trim wooden skewers as needed to fit your air fryer using heavy duty poultry shears for a clean cut. Metal skewers that fit the air fryer can also be used as an alternative.
  3. Assemble chicken skewers: Thread 6-7 pieces of the cut chicken thighs tightly onto each wooden skewer, continuing until all chicken is used. Season the chicken on all sides with salt and black pepper.
  4. Coat with butter and cook: Using a basting brush, coat all sides of each skewer generously with the garlic parmesan butter. Place skewers in the air fryer at 350°F. Cook for 5 minutes, then carefully baste again with more butter, cook for another 5 minutes, baste once more, and cook a final 5 minutes. The total cooking time is 15 minutes; the chicken should be golden brown and cooked through.
  5. Serve: Once all skewers are cooked, pour the remaining garlic parmesan butter collected at the bottom of the air fryer over the chicken. Garnish with freshly chopped parsley and serve with lemon wedges for added zest. Enjoy immediately.
