Tomato Basil Topping
- 2 cups diced Roma tomatoes (260g)
- 1 head garlic (minced)
- 1 1/2 tablespoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- 5 tablespoons fresh chopped basil (9g)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Chicken
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 4 slices mozzarella cheese
- 4-5 tablespoons balsamic glaze
Instructions
- Prepare the tomato basil topping: In a medium-sized bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Stir well to blend the flavors and set aside to let the mixture marinate.
- Prepare the chicken: If desired, pound the chicken breasts to an even thickness for uniform cooking. Coat each chicken breast with olive oil to help the seasonings adhere and promote grilling.
- Season the chicken: In a small bowl, mix the Italian seasoning, garlic powder, salt, and black pepper. Evenly coat each chicken breast with this seasoning blend for flavorful crust.
- Grill the chicken: Heat the grill to high heat. Grill the chicken breasts for 8 minutes on each side or until fully cooked through and juices run clear. Adjust the time based on thickness to avoid overcooking.
- Add cheese and melt: When the chicken is nearly done, place a slice of mozzarella cheese on each breast and allow it to melt on the grill, about 1-2 minutes.
- Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes to retain juices. Top each chicken breast with a generous spoonful of the tomato basil topping and drizzle with balsamic glaze before serving.
Notes
- You can use fresh mozzarella or regular sliced mozzarella cheese depending on your preference.
- If you don’t have a grill, you can cook the chicken in a grill pan or oven broiler.
- For extra flavor, marinate the chicken with olive oil and seasoning for 30 minutes before grilling.
- Use balsamic glaze for a sweet and tangy finish; you can find it in most grocery stores or make your own by reducing balsamic vinegar with a bit of honey.
- Serve with a side of salad, pasta, or crusty bread to complete the meal.
