Description

A simple and delicious dessert featuring ripe peaches and nectarines grilled to caramelized perfection, served warm with creamy vanilla ice cream, honey drizzle, and a sprinkle of sea salt.

Ingredients

Scale

Fruit

  • 2 ripe peaches
  • 2 ripe nectarines

Other Ingredients

  • 1 tablespoon canola oil
  • 8 large scoops vanilla ice cream
  • 2 tablespoons honey
  • 1 teaspoon flaky sea salt

Instructions

  1. Preheat Grill: Heat your grill to medium-high heat, preparing it for grilling the fruit evenly.
  2. Prepare Fruit: Cut the peaches and nectarines in half, remove the pits, and brush the cut sides lightly with canola oil to prevent sticking and enhance caramelization.
  3. Grill Fruit: Place the peach and nectarine halves cut-side down on the grill. Cook for about 3-4 minutes until grill marks appear and the fruit begins to caramelize, rotating them 90 degrees halfway through for crosshatch marks.
  4. Remove and Serve: Use tongs to remove the grilled fruit halves from the grill. Place one scoop of vanilla ice cream into the center of each fruit half.
  5. Finish: Drizzle honey over the grilled fruit and ice cream, then sprinkle flaky sea salt on top to enhance the flavors. Serve immediately.

Notes

  • Choose peaches that are just ripe — juicy and flavorful but firm enough to hold their shape on the grill.
  • Canola oil is used for its neutral flavor, but you can substitute with other light oils like vegetable or grapeseed oil.
  • For an extra depth of flavor, you can add a sprinkle of cinnamon or nutmeg before grilling.
  • If you don’t have a grill, you can use a grill pan or broiler to achieve similar caramelization.
