Description

Grilled Pineapple is a delicious and easy-to-make tropical treat featuring ripe pineapple slices brushed with a sweet and tangy brown sugar, butter, lime, and coconut mixture, then grilled to caramelized perfection. Served warm, it makes a perfect dessert or side dish with optional toppings like lime zest, vanilla ice cream, or caramel sauce.

Ingredients

Scale

Pineapple and Glaze

  • 1 ripe pineapple
  • ⅔ cup brown sugar, lightly packed
  • ¼ cup (½ stick) salted butter, melted
  • 3 tbsp lime juice (about two small limes)
  • ¾ tsp coconut extract
  • 2 tsp flaky sea salt

Optional Toppings

  • lime zest
  • vanilla ice cream
  • caramel sauce

Instructions

  1. Preheat grill: Preheat your grill to medium heat, about 300-350 degrees Fahrenheit, ensuring it's ready for cooking the pineapple slices evenly.
  2. Prepare pineapple: Peel, core, and slice the pineapple into ½ inch thick rings. You should get around 12 slices depending on the pineapple size.
  3. Make glaze: In a medium-sized bowl, whisk together the brown sugar, melted salted butter, lime juice, and coconut extract until well combined.
  4. Brush and season: Brush the pineapple slices on both sides generously with the brown sugar glaze. Sprinkle flaky sea salt evenly over both sides to add a savory balance.
  5. Grill pineapple: Place the pineapple slices on the grill and cook for 2-3 minutes on each side until caramelized and grill marks appear.
  6. Serve warm: Remove the pineapple from the grill and plate immediately. Serve warm with optional toppings like lime zest, vanilla ice cream, or caramel sauce for extra flavor.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • You can freeze leftover grilled pineapple for up to 6 months; enjoy it as a frozen treat on a hot day.
  • If you don’t have a grill, use a grill pan or a skillet on the stovetop and cook pineapple slices over medium heat for 2-3 minutes on each side.
  • For added flavor, try sprinkling a little cinnamon or chili powder on the pineapple before grilling.
