  • 6 Tablespoons salted butter
  • 16 ounces mini marshmallows, divided
  • 1 teaspoon pure vanilla extract
  • 6 cups rice krispies cereal
  • 1 1/4 cup holiday M&M's, divided
  • 1/4 cup holiday sprinkles
  • 5 ounces Ghirardelli white chocolate melting wafers, melted (1/2 bag)


Instructions

  1. Prepare the baking dish: Line a 9-inch square baking dish with parchment paper and set it aside for later use.
  2. Melt the butter and marshmallows: In a large saucepan over medium heat, melt 6 tablespoons of salted butter. Once melted, add all but 1 cup of the mini marshmallows. Reduce heat to low and stir continuously until the marshmallows are completely melted and smooth.
  3. Add flavorings and combine cereal: Remove the saucepan from heat. Stir in 1 teaspoon of pure vanilla extract. Then add 6 cups of rice krispies cereal and the remaining 1 cup of mini marshmallows. Gently stir until evenly combined.
  4. Fold in mix-ins: Fold in 1 cup of holiday M&M's and all of the 1/4 cup holiday sprinkles carefully so they are evenly distributed.
  5. Transfer mixture to dish: Pour the mixture into the prepared baking dish. Using your fingertips, press gently just to evenly spread it out without compacting too much.
  6. Decorate the top: Drizzle the melted 5 ounces of white chocolate wafers evenly over the top. Sprinkle the remaining 1/4 cup holiday M&M's and optionally add a pinch of extra holiday sprinkles on top for decoration.
  7. Set and serve: Allow the treats to set at room temperature for one hour until firm. Then cut into squares and serve.

Notes

  • Use any variety of holiday M&M’s such as milk chocolate or peanut butter, though peanut butter may add extra crunch.
  • Use fresh marshmallows and rice krispies cereal for the best texture and flavor; stale ingredients result in stale treats.
  • Jimmies (log-shaped sprinkles) are preferred for softness and appearance; quins (flat circle or shaped sprinkles) can also be used but avoid nonpareils in this recipe.
