Description

Peppermint Bark Rice Krispies Treats are a festive twist on the classic gooey snack, combining crispy rice cereal with peppermint-flavored marshmallow mixture and topped with drizzles of dark and white chocolate and crushed candy canes for a perfect holiday treat.

Ingredients

Scale

Main Ingredients

  • ½ cup salted butter
  • 2 (10-ounce) bags miniature marshmallows
  • ¼ teaspoon peppermint extract
  • 8 cups Rice Krispies
  • ¼ cup crushed candy canes (about 4 candy canes), divided
  • 5 ounces chopped dark chocolate (about ¾ cup)
  • 5 ounces chopped white chocolate (about ¾ cup)

Instructions

  1. Prepare the pan: Line a 9×13-inch baking dish with parchment paper. Unwrap and crush the candy canes finely.
  2. Melt butter and marshmallows: In a large pot over medium heat, melt the butter. Reduce the heat to low and add most of the marshmallows, reserving 1 cup for later. Stir continuously until marshmallows are completely melted and combined smoothly with the butter.
  3. Add flavor and cereal: Remove the pot from heat and stir in the peppermint extract, Rice Krispies, 2 tablespoons of the crushed candy canes, and the reserved marshmallows. Mix well to evenly coat the cereal.
  4. Press into pan: Transfer the mixture into the prepared baking dish. Use the empty butter wrapper, buttered hands, or a spatula to press gently into an even layer without compacting to keep treats light and airy.
  5. Melt chocolates: Carefully melt the dark chocolate and white chocolate separately by microwaving in 20-second intervals, stirring between each until smooth and glossy.
  6. Decorate: Drizzle both types of melted chocolate over the Rice Krispies layer, then gently shake the pan to smooth the top. Sprinkle the remaining crushed candy cane pieces evenly over the chocolate.
  7. Set and slice: Allow the treats to cool and set completely at room temperature before slicing into 18 squares for serving.

Notes

  • Store treats in an airtight container at room temperature for up to five days to maintain freshness and chewiness.
  • Wrap individual squares tightly in plastic and freeze for up to two months; thaw at room temperature before eating.
  • Reheat thawed treats briefly in the microwave for a soft, gooey texture, taking care not to overheat and melt the chocolate layers.
  • You can prepare these treats up to three days in advance and store in a sealed container, making them convenient for holiday entertaining.
