Description

These delicious Reuben Egg Rolls combine the classic flavors of a Reuben sandwich—corned beef, Swiss cheese, and sauerkraut—rolled into crispy egg rolls. Perfect as a snack or appetizer, they can be cooked using an air fryer, stove top, or oven and served with tangy Thousand Island dressing.

Egg Rolls

  • 12 egg roll wrappers
  • 2 tablespoons oil (for cooking)
  • Thousand Island dressing (for serving)

Filling

  • 500 grams corned beef (approximately 10 slices)
  • 1/2 cup Swiss cheese (or mozzarella cheese, approximately 5 slices)
  • 1/2 cup sauerkraut

Instructions

  1. Prepare the filling: Dice the corned beef into bite-sized pieces. Dice or shred the Swiss or mozzarella cheese. In a medium-sized bowl, combine the corned beef, cheese, and sauerkraut, mixing until evenly combined.
  2. Assemble the egg rolls: Place 1 to 2 tablespoons of filling in the center of each egg roll wrapper. Dip your finger in water and moisten the edges of the wrapper. Fold in two opposite corners toward the center, then tightly roll up the wrapper to seal. Repeat with remaining wrappers.
  3. Cook the egg rolls (Air Fryer method): Brush both sides of the egg rolls with oil. Air fry at 400°F for 10 minutes or until golden brown and crispy.
  4. Alternative Cooking Methods: For stove top frying, heat oil in a deep pot on medium heat and fry egg rolls in batches for 5 minutes or until golden brown. For oven baking, brush egg rolls with oil on both sides, place on a foil-lined sheet pan or on a rack, and bake at 400°F for 15 minutes, flipping halfway through and brushing with more oil as needed.
  5. Cool and serve: Allow the egg rolls to cool for 2-3 minutes before serving, as the filling will be very hot. Serve with Thousand Island dressing for dipping and enjoy!
