Description

These Strawberry Sheet Cake Cookies are soft, moist, and bursting with strawberry flavor, made effortlessly with a box of strawberry cake mix. Topped with a sweet strawberry glaze, they're perfect for a delightful treat that comes together quickly and easily.

Ingredients

Scale

Cookie Dough

  • 15.25 ounces box strawberry cake mix
  • 2 large eggs room temperature
  • 1/3 cup vegetable oil

Glaze

  • 1 cup powdered sugar
  • 1/4 cup strawberry preserves
  • 2 tablespoons half and half

Instructions

  1. Preheat Oven: Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.
  2. Make Cookie Dough: In a medium bowl, combine the strawberry cake mix, eggs, and vegetable oil. Use a handheld mixer on medium speed to mix until just combined, forming a very thick dough.
  3. Scoop and Bake: Using a 1½ tablespoon cookie scoop, portion the dough onto the prepared cookie sheet spacing cookies 2 inches apart. Bake for 12 minutes until edges are just barely golden.
  4. Cool Cookies: Allow the cookies to rest on the cookie sheet for 5 minutes before transferring them to a wire rack to cool completely.
  5. Prepare Glaze: In a small bowl, whisk powdered sugar, strawberry preserves, and half and half until smooth.
  6. Glaze Cookies: Once cookies are completely cooled, spoon the glaze over the top and allow it to set before serving.

Notes

  • Store leftovers in an airtight container at room temperature for up to 4 days; separate layers of cookies with wax paper.
  • Freeze cookie dough balls for up to 2 months; bake directly from frozen, adding 5-7 minutes extra baking time.
  • Optional: Add white chocolate chips to the cookie dough for extra flavor.
  • Use a 1 tablespoon cookie scoop for smaller cookies; reduce baking time to 8 minutes.
  • Egg substitute: ½ cup applesauce can replace the eggs for an egg-free version.
  • Let cookies rest 5 minutes on the sheet before transferring to rack.
  • Only glaze cookies once they are completely cooled to prevent melting.
