- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon salt
- 1 cup shredded cheddar cheese
- 1 cup shredded smoked gouda cheese

Instructions
- Preheat Oven: Preheat the oven to 375 degrees Fahrenheit to prepare for baking the dip.
- Caramelize Onions: In a large oven-safe skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the 2 large chopped sweet onions and cook, stirring occasionally, for about 15 minutes until the onions are soft and tender.
- Mix Ingredients: Remove the skillet from heat and add 1 cup mayonnaise, 4 ounces softened cream cheese, 1 teaspoon garlic powder, 1 teaspoon dried thyme, ½ teaspoon salt, 1 cup shredded cheddar cheese, and 1 cup shredded smoked gouda cheese. Stir all ingredients thoroughly to combine evenly.
- Bake the Dip: Place the skillet in the preheated oven and bake for 25 minutes or until the mixture is bubbly and hot throughout.
- Garnish and Serve: Remove the dip from the oven, garnish with chopped parsley, and serve warm alongside crackers, crostini, or slices of bread for dipping.
Notes
- Store leftover dip in an airtight container in the refrigerator for up to 2 days.
- This dip does not freeze well, so it is best enjoyed fresh or refrigerated.
- To reheat, warm gently in the microwave or oven until the cheese melts and the dip is heated through.
- For deeper onion flavor, consider caramelizing onions a bit longer until they turn golden brown.
- Substitute smoked gouda with mozzarella or Monterey Jack if unavailable.
